Tilapia and Asparagus for Two

In truth, the tilapia recipe is meant for 4, but the filets are small and we are hungry. Cole and I went to the gym after work today and since we are trying to eat healthy also, I'm making tilapia and baked asparagus for dinner!

Making both of these was so quick and easy. Set the oven temp to 400. 

Ingredients for Tilapia:

1tsp ground ginger
1tsp oregano
1tsp chili powder
1tsp paprika
1tsp ground mustard
1tsp black pepper
1pinch cayenne pepper
3heaping teaspoons of minced garlic 
1/4 cup olive oil
4 tilapia filets (5 small) 

To minimize the number of dishes to wash afterward, I measure the olive oil and mix everything else into the measuring cup. 

Put the fish into a baking dish (I used 9x13) and coat both sides of the filets with the mix.

Bake for 15 minutes.


Asparagus:

Sea salt
Garlic salt
Black pepper
Spray oil

Line a baking sheet with aluminum foil. Snap the stiff parts off of the asparagus. Spread them out on the baking dish. Spray with cooking oil, sprinkle both salts and pepper. Bake for 10 minutes. 

Easy as that!

It was delicious to enjoy while playing along with Jeopardy. Oh! Almost forgot. You need to try the Guinness Blonde. Period.
